Why is there so much fat in the Dr. Will Bar?

The modern American “low fat, fat free, reduced fat, no fat” diet is far from healthy! Generally speaking, healthy fats have been replaced with a primarily grain-based diet, high in carbohydrates. This is a major contributing factor to the development of “insulin resistance” which is a metabolic tendency for the body’s cells to become less responsive to insulin due to the repetitive ingestion of foods which cause a rapid rise in blood sugar, and therefore a surge in the release of insulin. Over time, this is a major contributing cause of weight gain, unhealthy elevation in LDL and drop in HDL levels, and most nutrition experts agree, diabetes.

On the other hand, essential fatty acids (Omega-3 and Omega-6), have widespread beneficial effects throughout the body. They are called “essential” because the body must have them, yet cannot synthesize them itself. One of the primary functions of essential fatty acids is the production of prostoglandins, hormone-like chemicals that regulate many body functions. They are required for energy production. They increase oxidation and metabolic rate, causing increased energy with higher elevated stamina and reduced recovery time from exercise and fatigue. Essential fatty acids are critical for brain function.

Why does the bar have an oily coating on it?

Perhaps the primary healthy aspect of the DrWillBar is its high content of essential fatty acids (Omega-3 and Omega-6 fatty acids). These come from the nuts and seeds, including flax seed (mealed), pumpkin seeds, sunflower seeds, almonds, peanut butter and coconut. It is to a large extent from these healthy fats that the sugars in the bar have a lower “glycemic effect”, promoting a “long slow burn” of energy, and therefore a long-time satisfaction of hunger, a feeling of fullness after eating for a surprisingly prolonged time.
